Manuka honey is a highly sought after nutritional superfood, derived from bees that pollinate the Manuka Bush (Leptospermum scoparium) found in some parts of Tasmania and New Zealand. Tasmania’s famous Leatherwood Honey comes from the white blossoms of the Leatherwood tree (Eucryphia lucida) unique to the pristine rainforest regions of Tasmania’s West Coast. It has a strong and distinctive balsamic flavour, with spicy undertones.
